If you can’t beat em, Eat em!

When tackling invasive species we’re always thinking of new and innovative ways to tackle invasive species.
Last year we experimented with a renowned local chef after providing them with some Japanese Knotweed who made a very tasty dessert for us to try
This got us thinking, are there other invasive species we can eat?? Turns out there are quite a few. Whilst many of these are animal species (which we don’t tackle) lets concentrate on edible plant species

Here are a few for your larder
Japanese Knotweed – Has a likeness to Rhubarb so make sure you add plenty of sugar!
Garlic Mustard – Great In a pesto!
Burdock – full of powerful antioxidants
Purslane – Good source of Omega 3 and vitamins
